Holiday Recipes - Potato Latkes

Ingredients:
16 oz Cascadian Farms hash browns
2 zucchini, shredded
3 Tree of Life large eggs
2 oz Bob’s Redmill potato starch
2 tsp kosher sea salt
1 tsp pepper
3 Tbsp Spectrum organic canola oil
Optional - Organic Valley sour cream
Optional - Santa Cruz apple sauce

 

Thaw potatoes well.

In a large bowl, mix all ingredients (except oil) together.

Over medium heat, add canola oil to a large sauté pan.

Arrange 2 oz portions of the potato mixture in pan.

Flip with a spatula when brown, about 3 minutes.

Cook 3 more minutes on other side, place on serving dish.

Serve hot with sour cream or apple sauce and enjoy!
